Both our custom built smokers are currently the largest most authentic American smokers on the UK festival food scene. We are the REAL DEAL, smoking all our meat once onsite, unlike our competitors!

The newsest addition to the Texas Smoker family is our 1946 Chevy fire truck. Shipped over from a Pottawatomie indian resvervation Kansas U.S fully converted to smoke up to a tonne of meat at a time.

On to the serious bits: rated 5 Scores on the Doors by Northumberland Council , each unit manager is trained to Level 3 Health & Hygiene,HACCP and First Aid.All staff hold Level 2 certification and are trained in using the SFBB documentation. We are NCASS registered and our public liability covers us up to £10 million

We currently have 2 smoker units.Each Texas Smoker is a horizontal flow smoker.The concept involves a system of adjustable plates that direct the smoke from the firebox to the opposite end of the chamber.At that time, the heat is then allowed to come into contact with the cooking racks and travel backwards towards the stacks which are set at grate level inside the smoker for added efficiency.The meat has a smoked flavour and a tenderness which cannot be attained by cooking directly over coals or propane gas.
The cooking is a labour of love and takes anywhere between 18 to 48 hours.Our fire is attended to every 2 hours, using food safe,sustainable oak or red oak.During the process we treat the meat with homemade mops and rubs to enhance the BBQ flavours
These units are HUGE and each can cook up to 1 tonne of meat at any given time
All meat used is supplied by our local butcher. It's British and with full traceability.
After almost a decade of success on both the street food and music festival scenes, we finally made Texas Smoker a permanent fixture in the heart of Newcastle City Centre. As part of the shipping container village The Stack, Texas Smoker continues to grow in popularity around the city
